Oatmeal Raisin Bars

These oatmeal raisin bars are great for breakfast on the run, to tuck into your purse, or as a snack! I love these bars because they are easy to make and taste delicious. This recipe serves 9.


2 cups quick oats
1/4 cup vegetable oil
1/2 cup brown sugar
1 large egg
3/4 cup milk
1/2 cup chopped walnuts
1/2 cup raisins
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt


Preheat oven to 350 degrees Fahrenheit. Grease a 9-inch square pan or ovenproof dish. In a large bowl, mix 2 cups quick oats, 1/4 cup vegetable oil, 1/2 cup brown sugar, 1 large egg, 3/4 cup milk, 1/2 cup chopped walnuts, 1/2 cup raisins, 1 tsp baking powder, 1 tsp cinnamon and 1/4 tsp salt. Scrape into prepared pan and bake 30 minutes, or until browned and set. Let cool before cooking.
